Chef Carly

When Jeremy and I got engaged, we were living in Blanding. He was living at home and thus was able to enjoy his mom's AMAZING cooking. I was invited over to dinner frequently and immediately began to worry (as if I wasn't already) about my cooking skills. After a delicious Deb dinner I would often remind Jeremy that life in our house just might not be as scrumdillyuptious. After all, the entire year I lived in Blanding I lived off Stove Top, peas, and popcorn. Every now and again I would make a simple casserole or a pan of pizza. That's it.

Since we've moved to Cedar I have made great efforts to up my cooking skills and menus. I believe in eating family dinners together; thus, I am determined to cook. Almost daily. I have found in the process that I LOVE looking in cookbooks (thank you to all you generous gift givers who stocked my cookbook shelf!) and I love trying new things (which isn't hard since I hadn't cooked much before).

Anyhow, today I did my weekly planning and shopping (hooray for not working on Fridays!!) and thought I would share some of my planned meals with you. Tasha used to post her weekly menus, and I used to love reading them. I still go back and find some of her old menus when trying to think up dishes for the week. I am pretty excited about what is coming up (since just about all of them are untried recipes). Perhaps they won't come out exactly in this order, but this is what Mr. Christiansen has to look forward to this week:

Tonight: Beef stir fry and spinach salad (with lemon pound cake for dessert--we have company coming)
Saturday: pulled pork sandwhiches (crockpot style)
Sunday: (more pulled pork? Just maybe.) Chicken noodle soup (I love soups these days!)
Monday: Greek Chicken
Tuesday: Chicken dumplings (I think... the recipe looks good, but I'm not sure what they are)
Wednesday: spaghetti with homemade veggie sauce.
Thursday: pork and swiss sandwiches
Friday: Go to the store? Eat leftovers?

ps. I am pretty sure I should be able to get this pulled pork to last more days--since it is 2.5 pounds of meat! (and postpone some of these dinners into the next week--which is what I really want to do)--any ideas for what to do with leftover shredded pork??

Homemade taquitos and guacamole! Yummy! I don't know if this will help you, but I usually do my grocery shopping in two week cycles (produce here can make it that long) and plan 10 meals for two weeks. Between leftovers (which I love) and an occasional quick fix meal (like Joe's not coming home so the girls and I eat someting instant) it works out great. I love cooking too, but I hate grocery shopping, so I make it a goal to only go twice a month. Just an idea. Your menu sounds delicious! Enjoy trying all the new recipes, and make notes. I find that very helpful for next time I attempt it so I remember what I liked and didn't like.

I'm the same way. I do most of my shopping for two weeks and then pick up some milk and random things in the middle. Your meals look yummy. Have fun cooking with all your new stuff. :)

I am with the joyous person and I think I am told you this too that I shop for two weeks and then go to the store. You'll find that you spend less that way too. But here is some of what is on our list this week Shrimp Linguine (sp?), Hot Wing Chicken, Corn Chowder- I too love the soup days and I am thinking about that tomorrow since it is such a cold day, and Honey Pecan Pork Chops.

Ooh, ok miss jeanine, now you need to post the recipe for honey pecan pork chops because that sounds amazing. I do not love to cook. I do cook, but I don't feel I am very skilled at it. I've come a long way though in the 5 years that I have been married. Anyway, one of my easy, yummy, go-to recipes is called Russian Chicken

2-4 chicken breasts
1 8oz. bottle Russian dressing (i think Wishbone is the only company that makes it)
8oz. apricot jam or preserves
1 package of onion soup
Rice (however much you will need for your family)

Mix the middle 3 ingredients and cover the chicken in the sauce. Cook in the crockpot on low for 4-6 hours or in the oven at 350 for an hour. Serve chicken and sauce over rice.

That sounds good Shannon. I"m going to have to keep that one on hand. I always love to cook using the crockpot. Well, Carly, this week I have actually come up with meals to make. I haven't cooked in SO long (except for making pizza when the missionaries came) and now that I feel better here's what I'm making this week: chicken tortilla soup, homemade tomato soup, honey lime enchiladas, pumpkin chili, and texas straw hats. All these items will last for multiple meals so I'm sure I can get by for two weeks on these. Let me know if you want any of the recipes. I've made all of them except the pumpkin chili - it sounds weird but Stanford and I love pumpkin!

Well Carly you are gettin your self domesticated! heehee You could always freeze some of your pork for another week. Shannon the Russian Chicken sounds great. I have a great recipe for Pumpkin Soup, I will post it on my blog. www.creativelyemmyk.blogspot.com I will also post some of my menus.

Love when people post menus, hense why I started doint it. I actually just posted two recipes - one you already have though - and my menu for the week is posted right now too! I think I just needed to feel better enough to really cook again to start posting menus. I am glad you enjoyed that. Keep posting yours too. I love seeing what people are making. I really like the idea of buy for two weeks worth of time too. I just went shopping and I think I could do a 2 weeks menu off what I bought. I think I will go change my menu to work for 2 weeks. And I bet I would save money if I only went to the grocery store 2 a month!! Go you on cooking! I loved the different things you are doing. I am with others on making enchiladas with the pulled pork or putting it on a salad or in tacos or serve by itself (not in a bun) with other fun side dishes. Good luck with your menu this week!

You could always make up some salad and toss in the pork, or even roll the salad and pork up in tortillas for salad wraps. Mmm... I haven't made salad wraps in a long time. I have a couple totally easy but ridiculously yummy recipes, do you want me to email them to you? I love cooking, but I never plan it out in advance as much as I should!
